- 1/2 bunch of basil
- 1/2 small bunch of coriander
- 1/4 cup salt
- 1 teaspoon turmeric (optional)
- 1 teaspoon ground cumin (optional)
- 1 teaspoon of paprika sweet or smoked (optional)
- 2 bay leaves (optional)

Wash and dry all vegetables and herbs thoroughly. Peel and chop the vegetables.
Heat the olive oil in a large frying pan and add the onion and garlic to sauté. When they are transparent, add the other vegetables. Season with salt, bay leaves, turmeric, cumin and paprika, if using, and let cook (in the water released by the vegetables).
When everything is well cooked and soft, remove the bay leaves and place the sautéed mixture in a blender to obtain a smooth cream. Return this cream to the frying pan and let it dry a little (about 3 to 5 minutes).
Pour the cream into ice cube trays or spread it on a baking tray covered with parchment paper (in this case, after freezing, cut it into squares to use gradually). Keep in the freezer for up to three months.
