This vegan version of banoffee, which is<br \/>\na pie with dulce de leche and banana, it&#039;s very tasty, pretty and has dulce de leche<br \/>\nmade with almonds, which is easy to make. In a bowl, place 150g of almonds<br \/>\nraw, cover with twice the amount of water and leave to soak for 8 hours.<\/p>\n<p>Drain, wash and place<br \/>\nin a blender, along with 4 more cups of filtered water. Blend for a<br \/>\nminute and then strain well in a fine sieve or colander.<\/p>\n<p>Heat this milk over a fire<br \/>\nlow and meanwhile, in a large, tall saucepan over low heat, melt half a cup<br \/>\nof demerara or crystal sugar, which will take about 7 minutes. Put half a cup<br \/>\nof hot milk in the sugar, which does not need to be completely melted, and wait for the foam<br \/>\nlower.<\/p>\n<p>Add the rest of the milk and let it cook for approximately 40 minutes in<br \/>\nlow heat, stirring occasionally. The sweet will be ready when it is well reduced,<br \/>\nfull-bodied and at the point of soft brigadeiro.<\/p>\n<p>Turn off, add a pinch of salt, 1\/4 tsp.<br \/>\nof vanilla extract and mix. Place in a bowl and beat with a whisk<br \/>\nfor about 2 minutes, until it becomes very creamy. And set aside. Preheat the oven to 200 degrees.<br \/>\nIn a food processor or blender, place 200g of vegan cornstarch biscuits and blend until smooth.<br \/>\ncrush, place in a bowl and add 3 tablespoons of vegetable oil and 3 tablespoons<br \/>\nof water and mix. Place this dough in a non-stick pan, with no more than<br \/>\n22cm in diameter, lightly greased and bake for about 15 minutes or until<br \/>\nedges are lightly browned. Remove from the oven and allow to cool. Melt<br \/>\n70g of semisweet or dark chocolate without milk, add 2 tablespoons of milk<br \/>\nof coconut flakes, mix and place on top of the dough. Add the dulce de leche and cover<br \/>\nwith plastic. Refrigerate for at least 6 hours to cool.<br \/>\nBefore serving, cut 3 medium bananas and mix with the juice of 2 oranges, so as not to<br \/>\ndarken, then drain the excess juice and place it on the pie. You can brush<br \/>\nthe juice too. Top with the vegan whipped cream of your choice and, if you want, add<br \/>\nchocolate shavings for decoration. It&#039;s ready!
