I always get requests to share<br \/>\na vegan brigadeiro recipe that does not contain soy condensed milk,<br \/>\nbecause some people have allergies or because they don&#039;t like the taste. I did some tests<br \/>\nwith homemade peanut condensed milk and they were very tasty and I&#039;m sharing<br \/>\nthe recipe here with you, as an option for Easter. First of all, prepare the peanut milk<br \/>\naccording to the recipe I taught. Try to strain it well, so that your sweet is<br \/>\nvery smooth. Place the peanut milk in a saucepan<br \/>\nhigh, add 1\/2 cup of demerara or crystal sugar and let it cook on low heat<br \/>\nfor about 1 hour, stirring occasionally. Your condensed milk will be ready when<br \/>\nis thick, firm and almost at the point of soft brigadeiro. If you want, beat for 3 minutes to leave<br \/>\nit with a more beautiful and creamy texture. To make the brigadeiro, add this milk<br \/>\ncondensed in a non-stick pan, add 2 tablespoons of natural cocoa powder,<br \/>\n1 pinch of salt, 1\/4 teaspoon of vanilla extract and 3 teaspoons of<br \/>\ncoconut oil or other vegetable oil. Mix well and cook over low heat<br \/>\nfor about 10 minutes, stirring constantly. Your brigadeiro will be ready to be shaped.<br \/>\nwhen you manage to form a kind of firm ball with the mixture, with the help of the<br \/>\nspatula. Spread this still hot brigadeiro on a<br \/>\ngreased plate and wait for it to cool. Grease your hands with oil and shape the brigadeiros<br \/>\nand then apply the sprinkles, as they are easier to fix. If it is difficult to fix the sprinkles,<br \/>\nlightly wet your hands with water or grease them again with coconut oil or another oil<br \/>\nvegetable. It&#039;s ready! These brigadeiros have a slight flavor<br \/>\npeanut butter, because they are made from peanut milk, but I don&#039;t think that&#039;s a problem. You can use almonds instead to<br \/>\nto be more neutral, but since almonds are more expensive, I prefer to use peanuts<br \/>\nsame. You can make a soft brigadeiro, leaving<br \/>\ncook for less time, for about 5 minutes, and you can even add melted chocolate<br \/>\ninstead of cocoa, to make it even creamier. This peanut condensed milk yields more or<br \/>\nless than 1 cup and I haven&#039;t tested other recipes with it, but these brigadeiros are very tasty. The yield will depend on the size you make<br \/>\nshape your brigadeiros, but this recipe yields approximately 20 units. Afterwards, to store, you can put them in<br \/>\na closed jar, which lasts on average, about 3 or 4 days in the fridge.
