Studies conducted at UFC also point to the possibility of using the substance from the plant&#039;s seed as an anesthetic.<\/p>\n<p>There is no medication on the market that can block the progression of osteoarthritis, but the results of experiments conducted by the university suggest that the substance extracted from guar gum could be used as a gel or in a solution for this purpose. Therefore, it could be used to protect against the destruction of the cartilage that covers the bones.<\/p>\n<p>In addition to guar gum, there is also xanthan gum. It allows starches in foods to retain air, while guar gum keeps large particles in suspension. Guar gum is generally good for preparing cold foods, such as fillings, while xanthan is the best option for pastries, as it replaces gluten in flours and doughs.<\/p>\n<h2>Guar gum and xanthan gum in food<\/h2>\n<p>If you want to have a better quality diet or are following a low-carb diet, which requires the exclusion of wheat, guar is very important for this to happen. In bakery or dairy products, such as cheese, yogurt and mousses, it is desirable to prevent the loss of water from the food, which would leave your food without texture, hard and dry. When a food is frozen, its water turns into ice crystals and, when it defrosts, the whey is easily lost and, consequently, the quality of its consumption declines.<\/p>\n<p>Guar gum is also widely used in puddings and ice creams, as it prevents the formation of ice crystals and the separation of ingredients. Because it is high in fiber, when consumed in excess, it can have laxative effects on people with weaker digestive systems. And, when added to baked goods, it is best mixed with liquid ingredients, unlike xanthan gum.<\/p>\n<p>By adding xanthan gum to ice cream, the formation of ice crystals is prevented, making the cream smoother and no longer requiring heavy cream. Although this gum contains fat, it results in the fermentation of cornstarch sugars, making it ideal for people who are intolerant or allergic to gluten or wheat.<\/p>\n<h2>Guar gum and xanthan gum in recipes<\/h2>\n<p>When preparing cold dishes with guar gum, you need one to two teaspoons for each liter of liquid. For hot foods, such as sauces, you need up to three teaspoons for each liter. For liquids with a high acidity content, such as lemon juice, it is better to add larger amounts of gum to compensate.<\/p>\n<p>When using xanthan gum, the amount varies for each food. For cakes, you need \u00bc teaspoon for every 125 g; cookies do not need the gum; for quick breads, use \u00bc to \u00bd teaspoon for every 125 g of flour; and in baked goods, 1 to 2 teaspoons for every 125 g of flour. When we use xanthan gum, <strong>guar gum and xanthan gum<\/strong> with low carb flour, the texture is much better.<\/p>\n<p>Both gums are grown in South Asia, where there are regions with arid and semi-arid climates.
