Bring to a boil, then reduce the heat to low and simmer for fifteen minutes. Strain the liquid. You will need 2 cups of broth for this recipe; you can discard or freeze the rest.<\/li>\n<\/ol>\n<p><strong>To make the soup:<\/strong><\/p>\n<ol>\n<li>Cook bacon, butter and onion in a large saucepan over low heat for 3-4 minutes or until onions are soft and bacon is cooked through, but not overdone.<\/li>\n<li>Add lobster stock and cauliflower. Cover and cook for 5-8 minutes or until cauliflower is tender but not falling apart.<\/li>\n<li>Add the almond milk and heat gently for 2 to 3 minutes. Do not boil.<\/li>\n<li>Add the lobster and heat gently for another 3 minutes.<\/li>\n<li>Remove \u00bd cup of broth to a small bowl and whisk in the xanthan gum. Add back to the soup and stir until fully combined.<\/li>\n<li>Add the apple cider vinegar, Cointreau, parsley, and 1 tablespoon of butter. Continue stirring until the butter is melted and fully incorporated.<\/li>\n<li>Taste and adjust seasoning to your preference.
