This moist, lightly sweetened bread is made entirely from coconut flour making this low carb bread completely wheat free and high in fiber.<\/p>\n<p>A super simple recipe for low carb sugar-free zucchini bread using coconut flour, confectioner&#039;s sweetener and granulated stevia extract.<\/p>\n<h2>Low carb zucchini bread | Ingredients<\/h2>\n<p>&nbsp;<\/p>\n<ul>\n<li>\u00bd cup coconut flour<\/li>\n<li>6 eggs<\/li>\n<li>\u00bc cup unsalted butter, room temperature<\/li>\n<li>1 teaspoon baking powder<\/li>\n<li>\u00bd teaspoon baking soda<\/li>\n<li>\u00bd teaspoon cider vinegar<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>1 teaspoon vanilla extract<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<li>1 teaspoon nutmeg<\/li>\n<li>\u00be cup grated zucchini<\/li>\n<li>\u00bc cup sweetener <\/li>\n<li>\u00bd tablespoon granulated Stevia extract<\/li>\n<\/ul>\n<h3>Low carb zucchini bread | Sugar free frosting<\/h3>\n<p>&nbsp;<\/p>\n<ul>\n<li>\u00bc cup confectioner&#039;s sweetener<\/li>\n<li>\u00bd teaspoon vanilla extract<\/li>\n<li>2 tablespoons of cream<\/li>\n<li>Teaspoon of cinnamon<\/li>\n<li>1-2 tablespoons water (optional if needed)<\/li>\n<\/ul>\n<p>See other bread recipes on our website<\/p>\n<h4>Low Carb Zucchini Bread | Instructions<\/h4>\n<p>&nbsp;<\/p>\n<ol>\n<li>Preheat the oven to 18 degrees.<\/li>\n<li>Using a mixer, mix the room temperature butter until smooth. Mix in the sweetener and cream until well combined. Mix in the eggs, vanilla extract, and apple cider vinegar and set aside.<\/li>\n<li>In a large bowl, mix together the dry ingredients of coconut flour, baking powder, baking soda, cinnamon, nutmeg, granulated Stevia extract, and salt. Set aside.<\/li>\n<li>Using a cheese grater or food processor, take the zucchini and grate it to a fine texture. I prefer to use a food processor for this step.<\/li>\n<li>Take the zucchini and drain some of the excess moisture. (optional)<\/li>\n<li>Before adding the zucchini, first slowly add the dry ingredients to the wet ingredients and mix until fully combined. Then mix in the zucchini until well combined.<\/li>\n<li>Grease a bread pan and add the dough.<\/li>\n<li>Bake for a minimum of 30 minutes and continue checking until fully baked.
