Place in a microwave-safe bowl with 2 tablespoons of cream and 1 tablespoon of butter. Microwave, uncovered, on high for 10 minutes. Stir to coat the cauliflower with the cream\/butter mixture. Microwave for an additional 6 minutes on high (or until tender). Remove from the microwave and place in a high-speed blender or food processor, along with the 8 pepperoni slices and \u00bc cup of mozzarella cheese. Blend until smooth. Season with salt and pepper to taste. You can adjust the cream and butter to your preference for consistency.<\/li>\n<\/ol>\n<h2>Low carb diet recipes | For the casserole<\/h2>\n<ol>\n<li>Spread the cauliflower puree into an 8 x 8 oven proof casserole dish. Top with \u00bd cup shredded mozzarella cheese, and layer with pepperoni. Bake at 400 degrees for about 20 minutes. Alternatively, you could microwave for 5 minutes.
