Forget vitamin A pills. Carrots provide vitamin A and a host of other impressive health benefits, including beautiful skin, cancer prevention, and anti-aging. Learn how to reap the benefits of this superfood.
Health Benefits of Carrots
- Improves vision
There is some truth to the old wisdom that carrots are good for your eyes. Carrots are rich in beta-carotene, which is converted to vitamin A in the liver. Vitamin A is converted in the retina to rhodopsin, a purple pigment needed for night vision.
Beta-carotene has also been shown to protect against macular degeneration and senile cataracts. One study found that people who ate large amounts of beta-carotene had a 40% lower risk of macular degeneration than those who consumed little.
- Helps prevent cancer
Studies have shown that carrots reduce the risk of lung cancer, breast cancer, and colon cancer.
Falcarinol is a natural pesticide produced by carrots that protects their roots from fungal diseases. Carrots are one of the only common sources of this compound. One study showed a 1/3 lower risk of cancer in rats that ate carrots.
- Slows down aging
The high level of beta-carotene in carrots acts as an antioxidant to the cellular damage done to the body through regular metabolism. This helps in slowing down the aging of cells.
- Promotes healthier skin
Vitamin A and antioxidants protect the skin from sun damage. Vitamin A deficiencies cause dry skin, hair and nails. Vitamin A prevents premature wrinkles, acne, dry skin, pigmentation, blemishes and uneven skin tone.
- Helps prevent infection
Carrots are known by herbalists to prevent infection. They can be used on cuts – shredded raw or cooked and mashed.
- Promotes healthier skin (from the outside)
Carrots are used as a cheap and very convenient face mask. Simply mix grated carrots with a little honey.
- Prevents heart disease
Studies show that diets rich in carotenoids are associated with a lower risk of heart disease. Carrots not only have beta-carotene, but also alpha-carotene and lutein.
Regular consumption of carrots also reduces cholesterol levels because the soluble fiber in carrots binds to bile acids.
- Cleanse the body
Vitamin A helps the liver eliminate toxins from the body. It reduces bile and fat in the liver. The fiber in carrots helps cleanse the colon and speed up the movement of waste.
- Protects teeth and gums
Carrots clean your teeth and mouth. They scrape away plaque and food particles just like toothbrushes or toothpaste. Carrots stimulate your gums and produce lots of saliva, which, because it is alkaline, balances acid-forming and cavity-forming bacteria. The minerals in carrots prevent tooth damage.
- Prevents stroke
Given all the benefits above, it's no surprise that in a Harvard University study, people who ate five or more carrots per week were less likely to suffer from a stroke than those who consumed just one carrot per month or less.

Follow the same step in the blender: first beat the eggs well, then add the chopped carrots, coconut oil and sweetener, beat again until you have a homogeneous mixture.
Add the grated coconut to the flour and yeast and beat briefly, just to mix. If it gets too heavy depending on the power of your blender, transfer it to a bowl, and finish mixing by hand, finally add the yeast and mix well again.
Grease a cake and pudding mold with a hole in the middle. Pour in the brigadeiro, and then the carrot cake batter. Don't worry, at first you might think it's going to go wrong, but it will work.
Bake in a bain-marie (use hot water) in a preheated oven at 200°C for 50 minutes. (The bain-marie is a very important detail for the recipe to work, okay? Wait for it to cool and unmold.
Tip: Always beat the eggs well before adding the ingredients so that your cake doesn't smell like eggs.
