Low carb shrimp and chayote recipe | Ingredients

  • ½ kg of cleaned medium shrimp
  • juice of 1 lemon
  • 1 tablespoon chopped coriander
  • salt and black pepper to taste
  • ½ cup of olive oil, 1 medium chopped onion, 1 chopped garlic clove
  • ½ kg of chayote, peeled and cut into cubes
  • 3 large tomatoes, skinned and seeded, chopped
  • 1 cup (tea) of shrimp broth
  • ½ cup (tea) of coconut milk
  • 1 teaspoon hot sauce
  • 2 tablespoons of chopped parsley.

Low carb shrimp and chayote recipe | How to prepare

Season the shrimp with lemon juice, coriander, salt and black pepper and set aside.

In a pan, heat the olive oil and sauté the onion, garlic and chayote.

Add the tomatoes, shrimp broth, coconut milk, hot sauce and salt.

Mix and cook for 15 minutes on medium heat or until the chayote is soft.

Add the seasoned shrimp, mix and cook for another 10 minutes and sprinkle with parsley.
