Low carb chocolate cake recipe | Ingredients for the dough

 

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 1 cup erythritol
  • 1.5 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1/2 cup cocoa powder
  • 1 cup of water
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup heavy cream

  • 60 grams of cocoa butter
  • 3 tablespoons powdered erythritol
  • 1 teaspoon vanilla extract
  • 2 tablespoons of cream

Low carb chocolate cake recipe | Instructions

 

  1. Preheat the oven to 200°C and start by mixing together 2 cups of Almond Flour with your Coconut Flour, Erythritol, Baking Soda and Salt.

2. In a small saucepan, heat together the butter, cocoa powder, and water over medium heat. Whisk continuously until combined, then remove from heat.

3. Pour in half of your chocolate mixture into your dry ingredients and stir to combine. Once it is thick and difficult to stir, pour in the other half and mix.

 

4. Add 1 egg at a time to your cake batter.

5. Then add heavy cream and vanilla extract and stir.

6. Pour the batter into a greased pan and bake for about 40-50 minutes or until a wooden skewer inserted in the middle comes out clean.

7. While the cake is baking, prepare your white chocolate frosting. Melt 60 grams. 

 
8. To do this, add your erythritol powder and mix to combine. Add the cream and let this mixture cool in the refrigerator, stirring every 5 minutes.
9. Once the white chocolate has cooled to the correct consistency (thick and opaque in color), pulse for a few seconds in a food processor or blender until smooth. Tip: If your white chocolate gets too hard, microwave it for a few seconds. Or let it sit in a hot water bath for a few minutes.
10. When your cake is baked, let it cool in the pan for about 10 minutes, then invert onto a plate or cooling rack set in a baking dish and let it cool completely.

11. Once your cake is cool to the touch, frost the cake. Take heaping spoonfuls of your white chocolate frosting and let it drape over the top of the cake and onto the baking sheet.

 

12. While the frosting is still wet, sprinkle the 20 grams of cocoa powder all over the cake. Let the frosting cool and harden, and then you can cut and enjoy!
