Low carb flaxseed bread | Ingredients
- 2 cups coarsely ground flaxseed
- 1 tablespoon of yeast
- 1 teaspoon sea salt
- 5 large eggs
- ½ cup water
- 1/3 cup avocado oil or olive oil
Low Carb Flaxseed Bread | Instructions
- Preheat oven to 350 degrees and line a 13×9 baking dish with parchment paper lined sides. Set aside.
- Combine flax seeds with yeast, herb mixture, and sea salt in a large bowl. Stir to fully combine and set aside.
- Add eggs, water and oil to the jar of your blender. Blend on high for 30 seconds, until frothy.
- Transfer the liquid mixture to the bowl with the flaxseed mixture.
- Stir with a spatula until just combined. The mixture will be very spongy. Once incorporated, let it sit for 3 minutes.
- Pour the mixture into a prepared baking dish. Smooth it out with the back of a spatula and transfer the pan to the preheated oven.
- Bake the bread for 20 minutes, until the top is golden brown. Remove from the oven and lift the bread (parchment paper sides up) onto a cooling rack. Remove the parchment paper from the bottom of the bread and let the bread cool on the cooling rack for one hour.
- Cut into 12 pieces.
- The bread can be toasted or frozen. It keeps in the refrigerator for 3-4 days and in the freezer for up to 3 months.
