Low carb flaxseed bread | Ingredients

 

  • 2 cups coarsely ground flaxseed
  • 1 tablespoon of yeast
  • 1 teaspoon sea salt
  • 5 large eggs
  • ½ cup water
  • 1/3 cup avocado oil or olive oil

Low Carb Flaxseed Bread | Instructions

 

  1. Preheat oven to 350 degrees and line a 13×9 baking dish with parchment paper lined sides. Set aside.
  2. Combine flax seeds with yeast, herb mixture, and sea salt in a large bowl. Stir to fully combine and set aside.
  3. Add eggs, water and oil to the jar of your blender. Blend on high for 30 seconds, until frothy.
  4. Transfer the liquid mixture to the bowl with the flaxseed mixture.
  5. Stir with a spatula until just combined. The mixture will be very spongy. Once incorporated, let it sit for 3 minutes.
  6. Pour the mixture into a prepared baking dish. Smooth it out with the back of a spatula and transfer the pan to the preheated oven.
  7. Bake the bread for 20 minutes, until the top is golden brown. Remove from the oven and lift the bread (parchment paper sides up) onto a cooling rack. Remove the parchment paper from the bottom of the bread and let the bread cool on the cooling rack for one hour.
  8. Cut into 12 pieces.
  9. The bread can be toasted or frozen. It keeps in the refrigerator for 3-4 days and in the freezer for up to 3 months.
