Low carb chocolate cake recipe | Ingredients:

  • 200 grams of dark chocolate (85% or higher and unsweetened)
  • 100 grams of cubed butter
  • 100 ml Cream (we used only cream but you can use whipping cream or sour cream)
  • 4 eggs, yolks and whites separated
  • 4 tablespoons Truvia or equivalent no-carb sweetener

Low carb chocolate cake recipe | Preparation:

It is very important to preheat the oven. Break the chocolate into pieces. Add the butter and microwave in short bursts until the chocolate melts. You can also do this in a microwave oven, stirring very slowly until smooth. Add the cream and sweetener and mix well. Add the egg yolks, one at a time, mixing until combined.

Beat the egg whites separately with a pinch of salt just until stiff peaks form (be careful, don't beat them any further). Fold the egg whites into the chocolate mixture in thirds gently until no white streaks remain. Bake at 325 F (160 C) for about 45 minutes or until the rest of the cake is set. Bring to room temperature, then chill for at least 4 hours before serving. This cake also freezes very well.

Don't despair if the chocolate mixture seems to be splitting when you add the cream, just keep whisking it for a few more minutes and it will emulsify into this glossy ganache.
