Celebrities who follow a low-carb diet – Gwyneth Paltrow

Gwyneth has always been conscious of her eating habits, spending many years exploring macrobiotic and vegan eating styles. Her passion for health led her to develop her lifestyle website, GOOP. After experiencing adrenal stress and anemia a few years ago, Paltrow's doctor advised her to overhaul her diet by cutting out sugar, dairy, wheat, corn, soy, coffee, and alcohol for a few weeks. Her anemia disappeared, and she felt great. This catalyzed her new Paleo-inspired cookbook, It's All Good. Today, she eats plenty of vegetables, salads, and white meat.

“My philosophy is to eat good, fresh food that is totally delicious. It has to taste good and be satisfying to all the senses. We know a lot now about how our diet is closely linked to our overall health. The bottom line is, our bodies have a hard time with anything processed. I know from my own research that the more well-rounded the diet, the better I feel.”

Gwyneth feels her body looks better at 42 than it did in her early twenties.

Like many women, Alanis has had a profound struggle with the reality of food. After healing from an eating disorder, she has now found a balance between the different healthy eating styles she has explored over the years.

“Right now, the best descriptor I can give is that I’m a nutritionist. Nutritional eating is a way of eating that bases food choices on getting the most micronutrients per calorie. I’m obsessed with nutrient-dense foods and how food, in general, can chemically alter your biology, your brain, your mood, your sleep, your vitality level, your allergies… and how that can alter any predisposition to disease. That we have this preventative medical power in our hands and our salad spoons is so exciting. At the end of the day, I’m a smoothie girl. And depending on where I am in my cycle, I’ll sometimes eat meat—grass-fed and organic, or salmon.”

I cook a lot of food at home using fresh fish or lean meat like chicken and vegetables. I eat well. I don't like the word 'diet.' Fermented vegetables and probiotics are also great for my skin and digestion. You can also buy mashed fermented vegetables at a health food store and sprinkle them on a salad or even eggs in the morning.”
