Hi! This vegan version of banoffee, which is
a pie with dulce de leche and banana, it's very tasty, pretty and has dulce de leche
made with almonds, which is easy to make. In a bowl, place 150g of almonds
raw, cover with twice the amount of water and leave to soak for 8 hours.
Drain, wash and place
in a blender, along with 4 more cups of filtered water. Blend for a
minute and then strain well in a fine sieve or colander.
Heat this milk over a fire
low and meanwhile, in a large, tall saucepan over low heat, melt half a cup
of demerara or crystal sugar, which will take about 7 minutes. Put half a cup
of hot milk in the sugar, which does not need to be completely melted, and wait for the foam
lower.
Add the rest of the milk and let it cook for approximately 40 minutes in
low heat, stirring occasionally. The sweet will be ready when it is well reduced,
full-bodied and at the point of soft brigadeiro.
Turn off, add a pinch of salt, 1/4 tsp.
of vanilla extract and mix. Place in a bowl and beat with a whisk
for about 2 minutes, until it becomes very creamy. And set aside. Preheat the oven to 200 degrees.
In a food processor or blender, place 200g of vegan cornstarch biscuits and blend until smooth.
crush, place in a bowl and add 3 tablespoons of vegetable oil and 3 tablespoons
of water and mix. Place this dough in a non-stick pan, with no more than
22cm in diameter, lightly greased and bake for about 15 minutes or until
edges are lightly browned. Remove from the oven and allow to cool. Melt
70g of semisweet or dark chocolate without milk, add 2 tablespoons of milk
of coconut flakes, mix and place on top of the dough. Add the dulce de leche and cover
with plastic. Refrigerate for at least 6 hours to cool.
Before serving, cut 3 medium bananas and mix with the juice of 2 oranges, so as not to
darken, then drain the excess juice and place it on the pie. You can brush
the juice too. Top with the vegan whipped cream of your choice and, if you want, add
chocolate shavings for decoration. It's ready! If you want to see another recipe for
