In our last recipe, we only used the cauliflower florets, but I said that the cauliflower florets would be used at another time. Now is the time! To make the dumplings, we cook the cauliflower florets with salt for about 3 minutes after the water boils. Then, we drain them well and put them in the blender to grind the cauliflower.
To make the dumpling dough, mix the shredded cauliflower with half a cup of parmesan cheese, half a cup of mustard and a tablespoon of oregano. We also add a beaten egg with a little spicy paprika, but you can use whatever seasonings you like. The dough should be consistent, but if you want it firmer, just add a little more cheese.
Hand-shaped or shaped, whichever you prefer!
Once the dough is ready, you can choose between making the balls by hand or using a mold to help with the process. I chose to use both hands and was able to make the balls without any problems, but if you find it easier, you can use a mold and place the dough inside it, helping to give it the desired shape.
We put the cupcakes in the oven preheated to 200 degrees for about 15 to 20 minutes, but remember that each oven is different, so keep an eye on them while they bake to prevent them from burning.
But I didn't stop there! I also decided to try making a cauliflower "ribbon" using the same dough as the dumplings. I heated a frying pan with butter, placed the dough in the shape of a ribbon and let it brown on one side and then the other. It was very tasty, but I personally thought the dumplings were even better, with the cheese melted and crispy on the outside.

- 1 Head of cauliflower
- 1 1/2 cups shredded cheddar cheese
- 3 large eggs
- 2 teaspoons Paprika
- 1 teaspoon turmeric
- 3/4 teaspoon rosemary
How to prepare low carb cauliflower fritters
1. Prepare the cauliflower head. We will need to prepare it before fixing it.

2. Cut your cauliflower into florets, making sure to get any excess stem.

3. Add the cauliflower to your food processor and pulse until it is the consistency of short grain rice.

4. Place your cauliflower in a microwave safe bowl and microwave for 5-7 minutes.
5. Since it is made in the microwave, we want to remove all excess moisture.
- I place my cauliflower on a kitchen towel to remove excess water.
- You will have cauliflower “juice” all over the towel.
- If you don't want to do this, you can also do this with paper towels.

6. Once you have the cauliflower in the kitchen towel, roll it up tightly and apply pressure (your entire body weight) to the cauliflower. Try to push out as much extra water from the cauliflower as you can.

7. Once finished, remove the cauliflower from the kitchen towel and place it in a bowl.

8. Add your eggs, mixing one by one in the cauliflower. You don't want the mixture to be too watery!

9. Add your cheese.

10. Finally, your spices for the cauliflower – turmeric, rosemary and paprika.

11. Mix everything well, using your hands if you want. I prefer to use my hands because I can get the mixture to be well balanced.

12. In a saucepan, heat your lard or coconut oil on high until very hot.
13. Form your cauliflower mixture into a ball, and then pat it into the palm of your hand.

14. Add the low carb cauliflower fritters to the hot oil and reduce the heat to medium high.

15. Allow them to crisp on one side before flipping them.

16. Continue frying until they are crispy on both sides.

17. All done! Serve on a bed of spinach, or just eat as a snack. They are absolutely delicious!
