- Chicken:
- 1 whole chicken, cut into pieces
- 3 crushed garlic cloves
- Juice of 1 lemon

- 1 large onion, finely chopped
- 2 tomatoes, skinned and seeded, chopped
- 3 cups boiling water

Wash the okra and dry it with a cloth, leaving it very dry. Cut it into large pieces.
In a pan, heat the lard and sauté the okra until there is no more slime. Stir occasionally, being careful not to let the okra fall apart. Set aside.
Season the chicken with crushed garlic, lemon juice, paprika and salt. Leave to marinate in the refrigerator for approximately 30 minutes.
In a pan, heat the lard and brown the onion. Add the chicken and tomato. Let it fry very well. Add the boiling water.
Adjust the salt, if necessary, and let it cook over medium heat, with the pan half-covered, for about 20 minutes or until the chicken is very tender.
Add the reserved okra and let it cook until it thickens. If there is too much broth, increase the heat and let it dry out a little more. Finally, mix in the chives.
