Ingredients for low-carb chicken stroganoff
800 grams of chicken breast chicken cut into cubes
200 grams of cottage cheese
100 grams of green olives
4 mint leaves
Finely chopped parsley, chives, and coriander
4 cloves of garlic, well crushed
salt to taste
butter or lard to sauté the garlic
1 medium tomato, finely chopped
1 medium onion, finely chopped
1 medium bell pepper, finely chopped
homemade tomato sauce
200 ml of cream
Black pepper, salt, hot sauce, oregano, to taste
Juice of half a lemon
210 grams of sliced ham
320 grams of sliced mozzarella
50 grams of grated cheese
How to make low carb chicken stroganoff
Season the chicken a little in advance (so that the meat absorbs the seasonings well, making your stroganoff tastier) with the following ingredients: salt, black pepper, oregano, hot sauce, sazón and lemon juice.
In a large, previously heated pan, add the lard/butter and crushed garlic, let it brown a little, then add the chicken breast, cut into cubes, and the chicken stock.
Stir occasionally until the breast is slightly golden.
Once it has browned a little, add the tomato, onion, pepper, coriander, chives, parsley and tomato sauce.
Let it boil together with the chicken breast.
Over medium heat, add the cream, olives and cream cheese, mix well until smooth and set aside.
Place a layer of chicken in a baking dish, then a layer of ham, and another layer of mozzarella, spread the grated cheese.
Continue repeating the layers and at the end add grated cheese and oregano. Place in the oven to brown.
