Saturated animal fat and its health benefits

Advertisements

Saturated animal fat brings numerous health benefits, but since the 1950s, the message has been that reducing fat intake prevents heart disease. And since the 1950s, the consumption of animal fat has decreased dramatically: almost everyone cuts, separates and does not eat that fat saturated animal fat  In addition to meat, butter is replaced with margarine, lard with corn, soy, cottonseed and canola oil. With all these changes, have cardiovascular diseases decreased? No. On the contrary, the number of cardiovascular diseases has been increasing due to the lack of good fat in the diet.

Saturated animal fat | New studies prove

New studies show that the saturated animal fat — found in meats, eggs and cheeses — is not associated with cardiovascular disease.

THE saturated animal fat was condemned based on an outdated study of cholesterol, based on hypotheses. The idea that it raised total cholesterol, the kind that clogs arteries and causes heart attacks, emerged in the 1950s with the theory of scientist Ancel Keys. By the 1980s, it was already clear that total cholesterol did not align very well with heart disease. So the story changed: saturated fat raises bad cholesterol, LDL. But saturated fat is the only food that raises HDL, the good cholesterol,” he explains.

Saturated animal fat and the low-fat diet

Now, researchers have been looking at LDH and HDL in search of the most reliable biomarker.

— The low-fat diet and the three generations of scientists who have been committed to it have prevented this debate from moving forward. It is a very complicated, political and industry-influenced issue, since companies know how to lower LDL but not how to raise HDL. LDL has always been everyone's focus — he points out.

When we receive the results of a blood cholesterol test, what appears is only “LDL”, and not “LDL-A” and “LDL-B”. The result on the test is, therefore, the sum of LDL-A (neutral) and LDL-B (potentially bad). How can we distinguish between them? Just take a look at the triglycerides and HDL, and remember the following rule: high triglycerides and low HDL indicate a lot of LDL-B (therefore bad – cardiac risk); while low triglycerides and high HDL indicate a lot of LDL-A (therefore good – low cardiac risk). Animal saturated fat and LDA_A

Here's an important piece of information: when we eat saturated animal fat, it increases LDL-A (large and buoyant) (not problematic). And guess what you eat that raises LDL-B (small and dense) (problematic)? If you thought carbohydrates, you guessed right. [American Journal of Clinical Nutrition, 1998, vol. 7, n°5, pp. 828-836] [American Journal of Clinical Nutrition, 2010, vol. 91, n°3, pp. 502-509].

From the 1980s onwards, the Western world, led by Americans, began to eat a diet increasingly high in carbohydrates and low in fat.

Saturated animal fat and taste in food

Fat gives food its flavor, and this is well known in cooking (see the famous and delicious traditional French cuisine). So what happens, naturally, is that when you remove the fat from food, it becomes less palatable. And the food industry solves this problem by adding more sugar.

This is the worst thing that could have happened to our diet. And it continues to happen today. The fat that occurs naturally in foods and provides vital nutrients for health and balance is gone, and in its place comes sugar, as an additive that makes us fat, steals nutrients, unbalances our bodies and harms our health.
