This crunchy low carb biscuit They take a few minutes to make, have very few carbs, and are great for those on a low-carb diet. They resemble butter cookies with a little sweetness.

1-1/2 cups almond flour
1/2 tablespoon of Stevia (can be your preferred sweetener)
2 egg whites
3 tablespoons butter, softened (a little more for the parchment paper)
1/4 teaspoon salt

 Preheat the oven to 200 degrees.
In a small bowl, mix all ingredients.
 Line a baking sheet with parchment paper and spread or brush with butter so the cookies don't stick.
 Place the mixture on the parchment paper and cover with another piece of parchment paper. Roll the dough between the two pieces of paper, otherwise it will stick to the rolling pin.
 Once the dough is rolled into a cookie, about 1/4", remove the top parchment paper and discard. Bake the cookies until golden brown, about 10 to 15 minutes, depending on your oven. While hot, cut into small squares and let cool.
 The recipe makes 40 to 45 cookies, depending on how thin pieces you end up with.
