Low Carb Eggplant Flour Bread | Ingredients
- 1 cup of flour eggplant
- 1 cup of CRUSHED whole sesame seeds (don't forget, okay?)
- 1 tablespoon psyllium
- ½ teaspoon guar gum
- 6 large eggs
- ½ cup water
- 1 tablespoon vinegar
- ½ tablespoon salt
- 1 tablespoon of baking powder

Low Carb Eggplant Flour Bread | How to prepare
The first thing to do is to crush the sesame seeds in a blender or food processor.
In a bowl, combine the eggplant flour, crushed sesame seeds, psyllium, guar gum and mix these dry ingredients well to obtain a homogeneous mixture.
Beat the eggs until the whites and yolks are mixed and add to the dry ingredients, also add a cup of water and white vinegar and mix everything very well until you have a completely uniform dough.
Note that the dough will not be thick or too liquid.
When the dough reaches this point, it's time to add the salt and yeast. Continue mixing until the last ingredients are fully incorporated into the dough.
