That low carb cauliflower bread It's spectacular and very easy to make, it's so good that you can use it for breakfast, for a hearty snack at night instead of dinner or even make recipes for low carb pizza.
Low carb cauliflower bread | Ingredients
- 2 cups (tea) of bouquets of cauliflower washed, grated or processed until they become grains*
- 2 cloves of garlic, minced or crushed
- 1 tablespoon extra virgin olive oil
- 1/2 cup (tea) of mozzarella cheese + 1/2 cup for topping
- 1 egg lightly beaten
- 1 teaspoon dried herbs – I used oregano and dried parsley
- salt if necessary

Note: use a food processor, blender or grater to cut the cauliflower into very small pieces, as if it were a type of rice.
Low carb cauliflower bread | Preparation
Preheat oven to 200 degrees.
Microwave the processed cauliflower for approximately 5 minutes until it softens. Set it for a shorter time and stir at the end to ensure even cooking. Set it again for a few more minutes if necessary, as each microwave has its own characteristics.
Brown the garlic in the olive oil until fragrant. Add it to the bowl with the cauliflower, along with the egg, herbs and mozzarella cheese (if the mozzarella is already very salty, you don't need to add salt). Mix with a spoon until a uniform paste forms.
Grease the pan with butter, line it with parchment paper, leaving an excess equivalent to the size of the bottom of the pan of this paper on one of the sides so that you can later turn the dough onto it.
1) Spread the raw cauliflower dough evenly throughout the pan.
2) Bake for approximately 30 minutes or until the surface is firm to the touch. Remove the pan from the oven and carefully pull the edges of the parchment paper (*) away from the pan. Turn the baked dough over onto the excess parchment paper.
3) Place back in the pan, cover with the remaining mozzarella and bake again until the cheese melts and turns golden.
4) Remove from the oven and cut into pieces to serve. They will be softer when warm and firmer when cool.
Note: the topping can also be made with tomato sauce and cheese, mushrooms, herbs, seedless tomatoes or however you wish.
(*) I use a paper called Assa + Leve that does not need to be greased. If you use regular parchment paper, it is important to grease it with butter so that your low carb cauliflower bread don't stick and ruin the whole dough.
