INGREDIENTS: FILLING

  • 1/3 cup (tea) of COCONUT OIL (or 80 ml)
  • 1/3 cup (tea) of COCONUT MILK (or 80 ml)
  • 1/2 cup (tea) of OVEN AND STOVE SWEETENER
  • 1 cup (tea) of unsweetened GRATED COCONUT

INGREDIENTS: TOPPING

  • 300g DARK CHOCOLATE (at least 75% cocoa)

PREPARATION METHOD: FILLING

  • Line an 18cm square tin with baking paper and set aside.
  • In a small saucepan, combine the coconut oil, coconut milk, oven and stove sweetener and mix.
  • Place over medium heat and stir until the oil melts and the mixture begins to boil.
  • Remove immediately from heat and mix in the grated coconut.
  • Pour the mixture into the prepared pan and refrigerate for about 2 hours, or until it hardens.
  • When it has hardened, use a sharp knife to cut the filling into about 16 pieces (each bar will be about 1.5 cm by 9 cm).
  • Place the bars in another pan also lined with parchment paper and place in the freezer to harden for about 1 hour.

PREPARATION: TOPPING

  • Melt and temper the chocolate using your preferred method*.
  • Remove the bars from the freezer and dip them one by one in the chocolate until they are covered.
  • Leave them to dry on parchment paper and refrigerate until ready to serve.
