Low carb quindim recipe | Ingredients
10 egg yolks
2 whole eggs
1 cup of xylitol
100 grams or one cup of grated coconut
1 tablespoon of butter
butter for greasing
Low carb quindim recipe | Preparation method
In a container, mix the sweetener and grated coconut.
Separate the egg yolks and pass them through a sieve, wait until they pass through, do not scrape.
Add the butter, the egg yolks passed through a sieve and the whole eggs.
Stir to mix all the ingredients well, until the mixture is homogeneous.
Grease a pudding mold, or molds, with butter.
Place the mixture and bake in a medium oven at 180 degrees in a bain-marie for 30-40 minutes.
Tip: when you pass the egg yolks through the sieve, put the egg yolks in and do not scrape the bottom of the sieve (on the outside). You can use whatever falls into the bowl, and throw away whatever is “stuck” in the sieve. This is the secret to a quindim without the egg taste.
