Low Carb Paleo Muffins | Ingredients You'll Need

Makes 15 servings

  • 500 g of cooked and shredded chicken (can be fish or lean red meat)
  • 2 egg whites
  • 2 tablespoons of flaxseed flour
  • 1 chopped onion
  • 2 tablespoons minced or paste garlic
  • 4 tablespoons chopped green olives
  • 4 tablespoons chopped parsley
  • Salt and pepper to taste

 

 

Low Carb Paleo Muffin | Preparation Method

Sauté the onion and garlic. Then add the chicken and salt. TIP: Avoid sauces, the shredded meat needs to be dry.

Place the chicken in a bowl and let it cool a little. Then add the egg whites, flaxseed, olives, parsley and chili powder, mixing everything very well.

Shape the dumplings into croquettes and place them on a non-stick baking tray. Bake in a preheated conventional oven at 180°C until golden brown. Serve immediately.
