How to make low carb rice | ingredients
1 small cauliflower (or half a large one)
1 dessert spoon of coconut oil (can be olive oil or ghee or clarified butter)
2 cloves of garlic
Salt to taste
5 ml of water
How to make low carb rice
The first thing is to prepare the cauliflower. Cut the florets and wash them very well. Now, to make it look like rice, you can do it in three ways:
- In the food processor (like I did) – just put the raw cauliflower in the food processor and press the pulse button until the cauliflower is crushed like grains of rice. This method is quick and easy.
I first beat the stems, then the flowers so they don't get mushy.
- In the blender – Add small portions of raw cauliflower and press the pulse button. The secret here is to do it in small portions at a time.
- Using a coarse grater – This one takes a little more work, but it works. Just grate the raw cauliflower using a coarse grater.
Sauté the garlic, add the kale, season to taste, and add the water, cover for 3 minutes and it's ready, you can serve it.
