  • 2 medium zucchini
  • 1 large egg
  • 1 cup of mozzarella
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 4 tablespoons of homemade tomato sauce
  • And the filling of your choice

 

How to prepare low carb zucchini pizza

Preheat the oven to 240°C. Wash the zucchini thoroughly and grate it with a cheese grater. Place it in a colander and squeeze it to remove all the liquid. Then, place the contents in a clean dish towel and gently wring it out to remove any remaining water. Place the zucchini, egg, ½ cup of mozzarella, garlic powder and pepper in a bowl.

Mix well until everything is well mixed. In a baking dish (if you put it in another dish, there is a great risk of everything sticking to the bottom) and greased with lard or butter, spread the zucchini mixture.

Bake for 20 minutes, wait for it to cool completely, and release the dough from the baking dish.

Now add the tomato sauce and the other ½ cup of cheese and the filling of your choice. Place it back in the oven for another 10 minutes. Remove from the oven and let it cool for a few minutes before cutting and serving.
