Ingredients for low carb panini
1 large egg
25g grated parmesan cheese (can be any other cheese of your choice)
50 grams of cottage cheese (about 2 tablespoons)
1 teaspoon yeast
filling: slices of cheese plate and ham
How to make low carb panini
In a bowl, beat the egg, grated cheese and cream cheese until you get a homogeneous mixture.
Add the yeast and beat a little more
Spread the mixture into a medium-sized, wide, shallow microwave-safe dish, in a pancake shape.
Microwave for approximately 3 minutes
Wait for it to cool a little, as it will be easier to release from the bowl. Use a spatula to detach the dough from the plate.
Place the filling of your choice on one half of the pancake and fold it over.
Place in a buttered sandwich maker until the dough browns a little (and if the filling is cheese, until it is well melted)
