Low Carb Avocado Cake Recipe – A cake for the low carb diet that is very different from what has been seen around, loaded with nutrients that make all the difference to the diet.

It contains healthy fats such as omega 3, which has antioxidant action and improves our cholesterol.

 

Low carb avocado cake recipe

Ingredients

  • Pulp of 1 whole avocado (approximately 2 1/2 cups),
  • 4 eggs,
  • 1/2 cup unflavored coconut oil,
  • Zest of 1 orange (optional),
  • Zest of 1 lemon (optional),
  • 1 cup erythritol,
  • 3 tablespoons of physilium,
  • 1 cup coconut flour,
  • 1 cup almond flour,
  • 1 tablespoon baking powder
  • Preheat oven to 180°C for approximately 35 minutes

 

Ingredients for the Avocado Cake Sauce:

  • 250ml of homemade coconut milk,
  • Juice of 1 lemon,
  • 1 tablespoon unflavored coconut oil,
  • 3 tablespoons of erythritol,
  • Lemon zest to taste
  • 1/4 teaspoon xanthan gum

Benefits of avocado for our health

Did you know that avocado is one of the most nutritious and versatile fruits (yes, this is a fruit!) available?

As I've been researching energy foods, avocados continue to come up as some of the most beneficial and nutrient-dense foods you can find!

For example, did you know that avocados contain lots of healthy fats that can help with your weight loss goals?

It sounds great, but the benefits don't stop there.

Here are 20 health benefits of avocado that will help you get fitter, slimmer, and improve your overall health.

Each of these claims has research to prove its viability.

1 – Avocado is a powerhouse of nutrients

Avocado comes from a tree called Persea Americana that originated in Mexico a few millennia ago.

There are different types of avocados that vary in shape (from round to pear-shaped) and color, the most common being the Hass avocado.

Universally known as a superfood, it is a popular dish among health-conscious individuals across the world because of the nutritional value it provides.

Consuming 150 grams, you will have:

  • 240 calories (184 of which come from fat)
  • Zero cholesterol
  • 11mg sodium
  • 13 grams of carbohydrates
  • 10 grams of dietary fiber
  • Only 1 gram of sugar
  • Vitamin K: 26% of the RDA
  • Vitamin C: 17% of the RDA
  • Potassium 14% from RDA
  • Vitamin B5: 14% of the RDA
  • Vitamin B6: 13% of the RDA
  • Folate: 20% of the RDA
  • Vitamin E: 10% of the RDA

Of all the fruits, avocado is different from other fruits because it contains more fat than sugar (22 grams versus 1 gram) and most of it is fat that is beneficial to our health.

In fact, it's the only fruit with this high monounsaturated fat that helps the body absorb antioxidants like beta-carotene and prevent macular degeneration.

Fat is not bad. Our bodies need fat to produce energy, absorb nutrients, and build cell membranes. The key is to eat the right kind of fat.

Of the 22 grams of fat avocado contains, 14.7 grams of it comes from monounsaturated fat also known as good fat that helps cardiovascular health based on a 1960 research.

Avocado also contains no cholesterol, sodium and very little saturated fat.

In addition to being a rich source of vitamins, minerals and healthy fats, avocado is a rich source of plant compounds that are responsible for many of its health benefits, namely:

Just when you thought avocados couldn't get any cooler, here it is: Avocados actually have fatty alcohols that strengthen your cells to act as a protector against harmful UV rays.

The secret goes back to avocado's legendary anti-inflammatory abilities and antioxidant properties.

One of the ways free radicals enter your system is through UV rays.

Overexposure can lead to too many free radicals in your system. But with avocados using their antioxidant properties to ward off free radicals, you don’t have to worry as much about sun exposure on your skin. In fact, avocados work to protect your body from the inside out.

The above studies look promising, but with a grain of salt because human cells.

While these two studies are encouraging, you have to take it with a grain of salt because it was done using human cells and may or may not have the same results in a living human.

20 – People who eat avocados are more likely to be healthier

People who eat avocados tend to be healthierThis claim is based on research done by the National Health and Nutrition Examination (or NHANES).

According to the data analyzed from 17,567 participants, it was concluded that individuals who consumed avocado are much healthier than those who did not.

They had much better nutritional intake and their risk of metabolic syndrome was cut in half.

People who regularly ate avocados also weighed less, had a lower BMI and had a smaller waist.

Here's the kicker, they had higher HDL aka good cholesterol.

However, this is not a guarantee that avocado will make you slim and lower your bad cholesterol levels, you must do your part to eat right and exercise.

Some precautions before eating avocado

Avocados are generally safe to eat, except when you have these conditions. If you suffer from any of these, please consult your doctor before consuming it.

Latex Allergy

Individuals who have a latex allergy may experience allergic reactions when consuming fruits such as kiwi, banana or avocado – this is called latex-fruit syndrome [ 32 ].

Latex syndrome is a condition in which the immune system attacks proteins in the fruit that are similar to latex.

This can lead to stomach pain, stomach cramps, headaches, and severe allergic shock.

Irritable bowel syndrome

Avocado contains FODMAPs or Fermentable Oligosaccharides, Disaccharides, Monosaccharides and Polyols. It can pose problems for individuals with Irritable Bowel Syndrome.

People with this condition are advised not to eat foods like avocado because it can lead to gas, cramps, bloating, constipation, or stomach pain.

How to add avocado to your diet?

Avocado is one of those ingredients that is so versatile that you will have no problem incorporating it into your diet.

The most direct way to consume avocado is to eat the whole fruit (minus the skin and seed, of course!).

Avocado Smoothie You can also add avocado to any smoothie recipe as part of a nutritious pre-workout meal.

One of my favorite combos is to add avocado, strawberries, blueberries, kale, and honey (ice is optional) to create a creamy and nutritious smoothie that can replace breakfast if you're in a rush.

Salads: Another way to incorporate avocado into your diet is to add it to your salads.

Appetizer: Looking for a healthy side dish or dip? Why not guacamole?

Guacamole: Avocado is a staple of every guacamole recipe and you don’t have to go to a Mexican restaurant to enjoy it. Make it yourself at home!

I never knew you could use avocado in a soup recipe, but Prevention shared a delicious gourmet recipe that includes cucumber, avocado, yogurt, milk, chopped onion, vinegar, cayenne pepper, chili pepper, lemon juice, and mint.

This recipe is simple to make, just pour all these ingredients into a blender and season with salt and pepper.
