Low Carb Cherry Flavor Pie Recipe

Low carb pie recipe | Ingredients

Mass:

½ cup Almond Flour

½ cup Brazil Nut Flour

½ cup Chickpea Flour

â…“ cup Coconut Flour

â…“ cup Sweetener (I used Erythritol + Xylitol)

1 teaspoon of salt

1 teaspoon CMC

100g cold butter cut into cubes

1 egg

1 teaspoon of Vanilla extract

Water (until it reaches the right consistency, but only if necessary)

Almond Cream Filling:

250 ml of Milk

1 box of cream

1 dessert spoon of vanilla extract

2 egg yolks

â…“ Sweetener (I used Xylitol)

1 dessert spoon of Guar or Xanthan Gum

Chopped and toasted almonds

Almond Essence (optional)

Red Fruit Sauce Filling:

1 small package of cherries (enough to decorate and for the syrup)

Some blueberries, raspberries and strawberries

Low carb pie recipe | How to prepare

Let's start with the dough: In a bowl, add the flours, sweetener, and salt and mix them together. Then, add the cold butter cut into cubes and use your fingertips to mix everything together until you get a kind of crumbly mixture.

Once this is done, add the egg and vanilla, mixing everything together until a nice little ball of buttery dough forms, as in the photo below.

Then, put it in the fridge to rest for a while (30 minutes for example), until the butter hardens a little so we can work with it.

Meanwhile, let's make the fillings! Starting with the Almond Cream:

In a saucepan, place the milk, cream, and vanilla extract and heat until it starts to boil. Turn off the heat and cover the pan for about 5 minutes.

In a bowl, add the egg yolks and sweetener, beating them well until they are incorporated. Once this is done, add the Guar Gum and continue mixing until you get a thicker, lighter cream.

Now take 1 ladle of the hot milk mixture and add it to this egg mixture, mixing well. Now pour this mixture back into the pan and stir for another 5 minutes or until you feel it is thicker and fuller.

Mix the toasted almonds and essence (if desired) into this cream and set aside, as one of the fillings is already ready.

For the other filling, simply add all the fruits to a frying pan and cook them, setting some aside for decoration.

Now let's get back to the dough. Take it out of the fridge and start shaping it on a springform pan. Once done, put it in the freezer for about 15 minutes. Then just bake it at 180ºC for about 30 minutes or until you see that the edges are golden brown.

Once everything is cold, simply assemble it, spreading the Almond Cream first and then adding the Red Fruit Sauce, decorating with some cherries.
