I like to consume it for breakfast and also include it in my lunch from time to time. This Low Carb Paleo Pancake It is not suitable for “rolling” like traditional ones, so I usually eat it open with a filling on top. When I want to roll it, I prefer to use the low carb crepe batter recipe.

Paleo low carb pancake | Ingredients

  • 2 tablespoons of shredded coconut
  • 1 tablespoon of pre-hydrated Flaxseed Flour*
  • 1 dessert spoon of Cinnamon Powder
  • 1 tablespoon Coconut Butter
  • 1 teaspoon of Baking Powder
  • 1 egg
  • Pinch of Salt

*Mix the flour with 1 tablespoon of water

Paleo low carb pancake | Preparation

Mix everything in a bowl, leaving the yeast for last until you obtain a homogeneous dough.

In a frying pan, put a little coconut butter and pour the batter to fry.

When the edges are golden, it's time to flip and fry the other side.

With the fried dough, decorate as you wish!
