Low carb parmigiana recipe | Ingredients
- 200-250g of ground beef (chuck, duckling etc.)
- 1 large egg
- 1/2 medium onion, finely chopped
- 1 crushed or finely chopped garlic
- 50 grams of diced bacon (optional)
- 200 grams of mozzarella cheese (I used half sliced and half grated)
- 1 cup homemade tomato sauce (click HERE for the full recipe)
- Oregano to sprinkle (optional)
- Salt and black pepper to taste
Low carb parmigiana recipe | How to prepare
Start by mixing the ground beef well with the egg, onion and garlic (I used a blended garlic with herbs that I had in the fridge). Season with salt and black pepper. Set aside.
Heat a pan and add the bacon to release the fat. When it is golden brown, add it to the meat.
Divide the meat mixture in half and spread into an ovenproof dish.
Fill with half of the cheese (I made two layers of sliced mozzarella). Repeat the layer of meat and cover with the tomato sauce.
Spread the remaining cheese over the sauce (I used grated mozzarella). Sprinkle with oregano and bake in a preheated oven at 200ºC for about 30-40 minutes until the meat is cooked and the surface is golden brown.
Serve immediately. You can accompany it with cooked zucchini or cauliflower rice and a delicious salad.
These quantities serve two to three people. Use the leftovers to make lunch boxes (which can be frozen for up to 3 months).
