Low carb fish stew recipe | Ingredients
- 300g of firm fish (dogfish, whiting, sea bass, dorado)
- 150g of small shrimps
- 1 lemon squeezed
- 1 medium onion, cut into half rings
- 2 to 3 cloves of garlic, finely chopped
- 1 finely chopped chili pepper
- 2 tablespoons of palm oil
- 1 large bell pepper (or two small ones — I used one red and one green) in slices
- 2 diced tomatoes
- 130g tomato paste (1 can)
- 200ml. coconut milk
- 1 tablespoon of chopped coriander (if you like, you can add more)
- Olive oil, salt and pepper to taste
Low carb fish stew recipe | How to prepare
Start by washing the ingredients thoroughly and chopping them according to the instructions in the list above. Season the fish and shrimp with lemon, salt and black pepper, cover with plastic wrap and let them rest in the refrigerator.
Heat a heavy-bottomed pan and add the olive oil to heat it up. Then, add the onion and garlic and sauté until they start to brown. Add 1 tablespoon of palm oil and the chili pepper (if you don't like it too spicy, remove half or all of the seeds). Mix and add the bell pepper and stir again.

When the peppers are soft, add the tomatoes. Season with salt and black pepper and mix again. As soon as water starts to collect at the bottom of the pan, arrange the pieces of fish and cover them with the tomato paste, coconut milk, coriander and the other spoonful of palm oil. Let it cook on low heat for 15 minutes with the pan covered.
After 15 minutes, add the shrimp, stir gently so that they are covered in the sauce and cover again to cook for another 3 minutes.
Then serve your moqueca with cauliflower rice/or some mashed potato side dish.
