Low carb sweet biscuit | Ingredients:

1 egg yolk

70g of almond flour

1 pinch of salt

4 tablespoons of xylitol

1 teaspoon of extract or vanilla essence

50g of butter cold

1 teaspoon of xanthan gum

extra portion of almond flour or coconut flour (I used about 1/2 cup)

First of all, preheat your phono to 180 degrees.

To start, set aside a yolk separated from the white.

In a bowl, place the almond flour, a pinch of salt and 4 tablespoons of xylitol sweetener and mix everything very well. Next, make a hole in the mixture and add 1 teaspoon of vanilla extract, the reserved egg yolk and 50 grams of cold butter.

Mix everything with your hands until you have a completely homogeneous dough; then add a teaspoon of xanthan gum and incorporate it into the dough. At this stage, you will need that extra portion of flour (approximately ½ cup), which you will add little by little until the dough reaches the ideal point, which will be when it stops sticking to your hands and completely to the bowl.

Once the dough is ready, take a sheet of parchment paper and fold it in half. Place the dough between the two strips of parchment paper and roll out the dough with a rolling pin until it is slightly thin.

Now cut the dough with a cookie cutter of your choice, line a baking tray with parchment paper, place the cookies and bake in the preheated oven for approximately 15 minutes.
