Cauliflower rice for your low carb diet

THE cauliflower It’s a very versatile vegetable and I loved trying to make fake rice with it. One of my favorite things to do with this cruciferous vegetable is to turn it into “cauliflower rice.”

Because rice is often a high-carb dish, it’s a great way to replace a starchy vegetable. Plus, it’s a great way to add more vegetables to your diet.

Two ways to obtain cauliflower rice

There are two ways to make cauliflower rice. You can use a grater (pictured below) traditionally used for cheese, or you can use a food processor with the grater blade to blitz it into small pieces. With either technique, you’ll be able to make small, rice-sized pieces.

An additional step I like to do is to press out any excess moisture from the rice by transferring the cauliflower rice to a large paper towel or absorbent dish towel and squeeze/press to remove any remaining water. This ensures that no excess moisture remains, which can cause your dish to turn out soggy.

Once you’ve got your cauliflower rice, it’s easy to cook! Simply sauté it in a large skillet over medium heat in 1 tablespoon of coconut oil or lard. Use a lid to cover the cauliflower and it will become more tender. Cook for a total of 5-8 minutes, stirring occasionally, then season as desired.
