Low carb chicken with vegetables is a super tasty combination and never gets old. Today we have this low carb recipe, a simple, easy and very tasty suggestion for a homemade lunch or dinner.
Ingredients for the low carb chicken layer
2 cups cooked/roasted and shredded chicken (2 medium fillets — you can use leftovers)
1 clove of garlic, crushed or finely chopped
1 teaspoon dried fine herbs
1 teaspoon of paprika or paprika
Olive oil, salt and black pepper to taste

1 cup of grated or chopped vegetables (zucchini, chayote, tomato, eggplant, carrot, beetroot, etc.)
1/2 small onion, chopped
1/4 cup vegetable broth

3 tablespoons grated parmesan cheese
Low carb chicken | How to prepare
Heat a large pan or frying pan and sauté the garlic in a little olive oil, without letting it brown. Add the chicken, herbs, paprika or paprika and mix well. Taste and season with salt and black pepper.
If the chicken is already seasoned, you can reduce the quantities or skip this step.
Line the bottom of a small baking dish with the seasoned chicken and set aside.
In the same pan, heat a little more olive oil and sauté the onion. When it starts to brown, add the vegetable broth (you can use water) and the very small vegetables (I put zucchini, chayote and tomatoes in the food processor and pulsed them a few times, but you can use any vegetables you have at home). Let it cook on low heat until the broth has evaporated. Taste and season with salt and pepper before spreading it over the chicken.
Finally, prepare the white sauce and finish the dish. Sprinkle grated cheese on top and bake in a preheated oven at 220ºC for approximately 10 minutes.
This quantity serves two people well.
