I simply LOVE this recipe low carb zucchini noodles! Super practical and quick to prepare, not to mention that it is low carb and vegetarian.
I choose the ingredients based on what I have available at home. You just need to follow a low-carb diet and use your creativity to make this simple recipe. Sometimes I make it with red sauce, other times I make it with pesto, which is the case with the one in the photo above.
I had some leftover leeks, red peppers, and pesto sauce at home, and that's basically what I used. So let's get to the ingredients and how I prepared it.
Low carb zucchini noodles | Ingredients for one serving
1 zucchini medium (cut into spirals or very thin slices)
Leek (the quantity will depend on your taste)
Red pepper in strips
Garlic Chopped beef plate
Oil or coconut oil
Pesto sauce (preferably homemade)
Feta cheese (if you like) or pumpkin seeds
Seasoning to taste (I used salt, black pepper, oregano)
Low carb zucchini noodles | Preparation method:
Fry the garlic, leek and bell pepper in olive oil or coconut oil. When fried to your liking, add the pesto sauce (approximately 1 level tablespoon), let it fry a little and add the zucchini. Stir and cover the pan for approximately 2-3 minutes. Then just serve and sprinkle with cheese or seeds (or both!).

A good accompaniment to this dish is grilled salmon (it's always important to add a source of protein).
