With the change in our eating habits, we end up thinking that we will never eat certain types of food in our diet again, such as gnocchi.
But we discovered a fantastic recipe that will allow us to eat a low carb gnocchi and without any fear of going off the diet low carb
Low carb gnocchi | Ingredients
- 4 cups of mozzarella shredded
- 6 large egg yolks
- 2 teaspoons salt
- 1 teaspoon garlic powder
Low carb gnocchi | How to prepare
To prepare the low carb gnocchi, completely melt the mozzarella along with all the seasonings you want, we only use garlic powder and salt for this basic recipe. We put it in the microwave for approximately one minute. Separate the 6 egg yolks and whites and beat until you get a homogeneous mixture.
Once these two processes are complete, pour in the egg yolks and mix in the melted mozzarella until you have a smooth mixture. This process must be done very quickly, as the mozzarella does not mix easily with the egg yolks.

When everything is well mixed, separate the dough into four equal parts and roll each part into a long, thin strip as shown in the photo.
Cut into pieces of approximately 2.5 centimeters. Press down on each one gently with a fork to make them more and more similar to our traditional gnocchi.
In a pan with boiling water, place the low carb gnocchi inside until they all float and then take them out and place them in a colander to drain the water.
Then fry the gnocchi on both sides in a pan with lard or butter until golden brown and they are ready to eat!
Make your favorite sauce with meat, vegetables and seasonings, pour over the top and serve. This recipe makes four servings.
