  • 600 grams of minced meat
  • 100 grams of cream cheese
  • 4 cloves of minced garlic
  • Spices to taste {I used sweet paprika, pepper and nutmeg}
  • Salt
  • Sliced cheese
  • Spinach {I used frozen}
  • 3 eggs
  • Oil

Low Carb Spinach Meatloaf Recipe | Preparation

  1. In a bowl, mix the meat with the cream cheese, two minced garlic cloves, spices and salt to taste. Set aside.
  2. In a frying pan, add a dash of olive oil, two chopped garlic cloves and the spinach. Season to taste with salt and cook until the water evaporates. Set aside.
  3. In a loaf tin, add a dash of olive oil and, using absorbent paper, spread the oil evenly throughout the tin.
  4. Place the meat in the pan and shape it, leaving a small cavity in the middle. Place slices of cheese in this cavity, top with the sautéed spinach and finally the eggs.
  5. Bake in the oven until cooked through.
