The Low Carb Farofa Recipe is very different from the traditional farofa we used to eat, usually made with cassava flour, it is not ideal for those who are looking to lose weight. This low carb farofa only takes ingredients that are included in the low carb diet and paleo diet, helping us satisfy our craving for a tasty and healthy farofa.

  • 1 tablespoon of butter (or finely chopped bacon)
  • 1/2 onion, diced
  • 1/2 small grated carrot
  • 2 cloves of garlic, minced or crushed
  • 1 cup of crushed cashew nuts (or other nuts of your choice)
  • Chopped celery or parsley leaves
  • Salt and pepper to taste

Low carb farofa recipe | How to prepare

If you are using bacon, place it in a hot frying pan to release the fat. If you are not using bacon, melt the butter. Sauté the onion until it becomes transparent (I used a red onion, so that the stuffing would be more colorful). Add the crushed garlic cloves and the grated carrot.

When it wilts, add the crushed cashew nuts (just blend them in a blender or food processor until they are more or less fine, as you like — I prefer to leave them more chunky so they are nice and crunchy).

Let everything fry over medium heat for about 5 minutes, stirring constantly. Taste and add salt and black pepper if necessary.

Turn off the heat and add a handful of finely chopped celery or parsley leaves. Serve immediately while still hot or after it has cooled.

If you want to make the stuffing more Christmas-y, add about 1/2 cup of shredded turkey and/or chopped dried fruit.

This quantity serves two servings.
