Low Carb Barbecue in a Pressure Cooker

Low carb diet – Living in an apartment will no longer be an excuse for not enjoying a nice meal low carb barbecue of ribs, much less lack of time, aversion to smoke or simply laziness to light the barbecue!
You can use the meat of your choice to use this technique in your low carb barbecue (Beef ribs, Alcatra, Maminha, Contra filé), but the main secret is the sausage (the measurement will always be for one part meat, half part sausage).

 

Low carb barbecue | Preparation method

1 kg of beef ribs (or other meat, in large pieces, of your preference)
1/2 kg of Tuscan sausage
NO SALT, OIL OR SEASONING (read the rest of the recipe to understand why)

Low carb barbecue | Step I:

Very important: Make several small holes in the sausage and meat with the tip of the knife. This is essential to release liquid and fat during cooking and also to exchange flavors. Try to place the meat side by side with the sausage in the pan, creating layers.

Low carb barbecue | Step II: Cooking

 

Cover the pressure cooker and cook over high heat until it starts to sizzle. Then lower the heat and cook for EXACTLY 40 minutes. At this point, it is important to use the stove's timer to avoid overtime and the risk of burning.

Remove from heat and release pressure underwater.
There you have it!!! You will find golden and juicy meat, perfect to go straight to the table, without having to sauté anything, add oil, just put everything in the pan and cook for 40 minutes! What's better, with a barbecue flavor!
You can serve it with a leafy or potato salad, farofa and vinaigrette sauce!
