2 carrots, sliced

1 chayote in cubes

1 zucchini in cubes

100g grated parmesan cheese

200 ml coconut milk

Salt and grated nutmeg to taste

Low carb grilled vegetables | Preparation method

Melt the butter in a saucepan over medium heat. Add the milk and cook until thickened, stirring. Mix in the cream, cream cheese, salt, and nutmeg, and turn off the heat. Set aside. Steam the vegetables until al dente. Set aside. Heat the butter in a large skillet over medium heat and fry the leek and garlic until wilted. Add the cooked vegetables, salt, and pepper, and sauté for 2 minutes. Transfer to a baking dish, cover with the sauce, sprinkle with cheese, and bake in a preheated oven at medium heat for 10 minutes or until golden brown. Remove and serve as a side dish for any occasion.
