This meal is loaded with protein from the chicken, and one cup of cauliflower is 25 calories. I might add in some chopped broccoli and maybe even try another meat next time, but those are the only adjustments I was planning on making.

- 2 cups riced cauliflower, uncooked
- 1 tablespoon Italian seasoning
- 2 cups chopped mushrooms
- 2 cups diced cooked chicken
- 4 egg whites
- ½ cup Parmesan and Garlic Cheese
- ¼ cup heavy cream
- Mozzarella cheese (optional for topping)

- Preheat oven to 350 degrees. Spray a casserole dish with non-stick cooking spray.
- In a large bowl, combine cauliflower rice, Italian seasoning, mushrooms, and chicken. Spread
- In the prepared casserole.
- In a separate bowl, combine the egg whites, ½ cup cheese, and milk. Beat until well combined.
- Pour over the cauliflower rice.
- Bake the casserole for 15-20 minutes or until heated through.
- Let cool before serving and top with mozzarella cheese.
