Low carb mixed stew recipe – A delicious low carb recipe, with a variety of vegetables that will provide you with a super healthy diet while losing weight.

Vitamins and Antioxidants

One of the main health benefits of vegetables is their high nutrient content. Vegetables are loaded with vitamins and minerals that contribute to growth and good health. For example, the U.S. Department of Agriculture notes that many vegetables are rich in potassium, which is important for healthy blood pressure. Several vitamins, such as C and A, help maintain healthy eyes, skin, teeth, and gums, fight infections, and promote wound healing. Perhaps most importantly, vegetables are rich in a certain group of nutrients called antioxidants, which fight cell damage and help prevent heart disease, cancer, Parkinson's disease, atherosclerosis, heart attack and Alzheimer's disease, says the Linus Pauling Institute.

Fiber

Another substantial benefit of vegetables is dietary fiber. Fiber is an important nutrient found only in plant foods. As part of a healthy diet, fiber helps clear bad cholesterol from your arteries, thereby reducing your risk of heart disease, says the USDA. Fiber also keeps your digestive system running smoothly, helps control blood sugar levels, and may help prevent cancer.

Favorable characteristics of the low carb diet

Vegetables are also a boon for dieters. Because they’re generally low in fat and calories, you can eat plenty of them without gaining weight. If you replace vegetables with other high-calorie foods in your diet, you’ll reduce your calorie and fat intake, making it easier to control your weight. The fiber in vegetables also helps you manage your weight. Fiber keeps you feeling fuller for longer, helping you eat less and aiding in weight loss or maintenance.

Considerations

Some vegetables are healthier than others. The Harvard School of Public Health states that potatoes—which many people consider a vegetable—don’t actually count toward your recommended daily servings of vegetables. Instead, potatoes, and often corn, are starchy foods that are more like a serving of grain than a serving of vegetables. When choosing vegetables, keep in mind that, in general, brightly colored vegetables are higher in nutrients than less colorful options. For example, spinach contains significantly more vitamins and antioxidants than lettuce. If you have questions or concerns about your diet or vegetables for good health, consult your doctor or a registered dietitian for more recommendations.
