Low carb beef stroganoff recipe | Ingredients

  • 1 kilo of rump or other meat of your choice
  • 100 ml of brandy
  • 250 grams of fresh or canned mushrooms
  • 200 ml of strained tomato sauce
  • 1 cup of heavy cream
  • 1 red onion
  • 2 cloves of garlic
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1 cup of water

Low carb beef stroganoff recipe | How to make it

Prepare the meat: Using a sharp knife, cut the meat into steaks on a cutting board and then cut into thin strips or small pieces. Place in a bowl, season with salt and pepper and set aside.

Prepare the onion and garlic: Peel the onion and chop it very small.

Peel the garlic cloves with a small knife or use a suitable peeler.

Squeeze the garlic with a garlic press or chop it very finely with a small knife.

Prepare the mushrooms: if you are using fresh mushrooms, clean them with a soft vegetable brush and if you are using canned mushrooms, drain them in a sieve. Then cut them into slices and set aside.

Fresh mushrooms are larger than canned mushrooms, but when cooked they shrink in size and make the stroganoff very tasty.

Prepare the stroganoff: For this recipe, use a large pot or deep frying pan with a lid. Add the butter and let it heat up. When the broth has dried out enough, add the cognac and burn it with a lit match to “flambé” the meat. This will give the stroganoff a special flavor. Let it burn until the alcohol in the cognac has completely evaporated.

Then add the water, the finely chopped mushrooms and the tomato sauce, stir and let it cook a little longer with the lid on until the meat is tender and the mushrooms reduce in size. Finally, add the cream and, stirring constantly without letting it boil, mix it evenly. Serve hot and accompanied by the suggestions below.
